Momentum: From the Forest to the Plate. Part III

The Festival of Forgotten Food 2019 aimed to "revive recipes and ingredients lost in memory, and in some cases on the verge of extinction of their kind, both because they are associated with poverty; or rurality; or the fact that they are not species of current agricultural interest". This festival, supported by the Algarve 365 cultural program, encompassed several initiatives, including two sensory experiences on the 8th and 9th of November - in Lagoa and S. Braz de Alportel - which started from the theme "Momentum - From the Forest to Prato", using products from the region related to the theme of the festival, and animated by performances. These moments were guided by professors Maria José Pires and Ricardo Bonacho with the students of the master's degree in Innovation in Culinary Arts of the 2019/2020 edition, under the guidance of Chef André Gerardo. This second moment of Momentum: From the Forest to the Plate was an adaptation of the original concept presented in July at Quinta da Ribafria - Sintra.
